I love a quick and easy dish for dinner, but it still has to be delicious! Enter this amazing “Lazy Lemon Pasta” dish!
This incredibly yummy recipe comes from one of my favorite bloggers, The Londoner (if you don’t follow her, you are missing out). If you love lemon, basil, and cream cheese as much as I do, then you will fall in love with this pasta!
It takes just a few ingredients and only about 10-15 minutes from start to finish. All you need for two heaping servings is:
Two handfuls of quality, dry pasta (I prefer to use linguine)
1 lemon, sliced
1 handful of fresh basil
2-3 Tbsp cream cheese (you could also use the herb or black pepper Boursin cheese, which is amazing!)
3 cups of warm vegetable stock
Pinch of salt and pepper
The best part of this recipe (besides the yummy ingredients and speed) is that it only requires one pot! Yay for easy clean-up!
All you need to do is put all of the ingredients into a decent-sized pot, place the burner on medium heat, and pop the lid on…super simple!
It should only take about 5-7 minutes to get the pasta nice and soft (it’ll depend on the type of pasta used).
Once the pasta starts to get soft, but isn’t fully cooked yet, remove the lid and let all of the goodness just simmer away. Give it a stir a couple of times and let the sauce reduce and come together.
Look at that creamy goodness!!!
After about 3 minutes of letting the pasta and sauce simmer, you should be left with a nice, creamy yum-licious sauce!
Take the pot off of the heat, remove the lemon slices and basil, and serve immediately.
I garnish mine with some fresh basil leaves and a lemon slice to make it pretty!
Serve with a nice glass of chilled wine and some bread to help soak up any remaining sauce.
